my nutella....................!

i've been having dreams every night for the past few weeks.
having dreams means the body is not fully rested.
and it also means by 4pm, i'm totally drained.

anyway back to point, the latest dream i had was really hilarious.

this July when i was in Paris, i saw this 5kg nutella bottle that those roadside crepe stalls were selling. DAMM! i was dead intent on getting my hands on that bottle. most unfortunately, the supermarkets i went to, didn't sell that particular size.

the other way was thru ebay. which the shipping cost will cost me an arm and a leg.

so the last way i could "get" it, was thru my dreams.


Yes.
last night i dreamt i held it ecstatically in my arms.

AAARRRGGGHHHHH!!!

2weeks left.

Pressure's starting.

Me...
- haven do GST registration: it's freaking chim. zero-rated supplies? simi lai eh!?!?
- haven do BPP: some lame presentation to the CEO.
- haven submit tonnes of form to HQ: policies... CPF contribution... agreement... contracts...
- haven recruit staff: much less 'bout training them(duh).

They...
- stocks are in a big mess: some drinks are at the roof sunbathing. some under the sink, afraid of the heat. some are hanging out with the detergents and roaches, outside the toilet.
- shelter of the backyard not fixed: so if it rains, i have to take the umbrella.
- hygiene: perishable, cups and lids holed up with the hose reel. cheese glued to the interior of the machine. i saw and smelled a pack of rotten rotting rottened eggs on the stairs. power thurma!!!
- backroom not repainted: the whole room is black in color. even the ceiling fan. perfect condition for sauna. perfect condition for stocks to be ruined.


2weeks left.

Pledge Recital?!

"During the last X years, we had witnessed the reciting of the C.C. Pledge by operating crew on XX August, which marked C.C. Day. We have had very heartening feedback that crew felt uplifted in reciting the pledge before a flight. It helped to reinforce the crew culture, and resulted in even better service and teamwork on board. Moving forward, we are confident that reciting the Pledge on a regular basis at pre-flight briefing should prove to be a significant galvanising force and motivator for our crew.

As such, we would like all crew to recite the C.C. Pledge at the end of the briefing for all flights departing out of SIN on the first day of every month, starting from Oct 2009.

By doing so, we look forward to our crew developing a greater sense of belonging, pride and purpose, driven by the confidence that the whole team is working together towards excellent service."

Old Fashioned Chocolate Cake



Ingredients...

* 200g plain flour
* 200g caster sugar
* 1 teaspoon baking powder
* 1/2 teaspoon bicarbonate of soda
* 40g best-quality cocoa
* 175g soft unsalted butter
* 2 large eggs
* 2 teaspoons real vanilla extract
* 150ml sour cream


How to...

1. Mix the flour, sugar and leavening agents in a large bowl and beat in the soft butter until you have a combined and creamy mixture.

2. Whisk together the cocoa, sour cream, vanilla and eggs and beat this into your bowl of mixture.

3.Bake for 180 degree for 25-35 min.


For the ICING..

* 75g unsalted butter
* 175g best quality dark chocolate
* 300g icing sugar
* 1 tablespoon golden syrup
* 125ml sour cream
* 1 teaspoon real vanilla extract

1. To make this icing, melt the butter and chocolate in a good-sized bowl either in the microwave or suspended over a pan of simmering water. Go slowly either way: you don’t want any burning or seizing.

2. While the chocolate and butter are cooling a little, sieve the icing sugar into another bowl.

3. Add the golden syrup to the cooled chocolate mixture, followed by the sour cream and vanilla and then when all this is combined whisk in the sieved icing sugar.

4. When you’ve done, you may need to add a little boiling water – say a teaspoon or so – or indeed some more icing sugar: it depends on whether you need the icing to be runnier or thicker; or indeed it may be right as it is. It should be liquid enough to coat easily, but thick enough not to drip off.

Roaming Enemies

Yesterday Noon: discovered the army of (returning) ants that marched out from a tinyyy hole in the wall crack which the sun shines on.

Last Night: a baby lizard crawled out from somewhere in between my paper boxes.

This Morning: a huge (those can fly de lorrr!!) cockroach was on the ceiling corner, that happens to be directly above my sleeping side.

WTH!!! Pest Society ah?

Cinnamon Roll with Nutella-Coffee Frosting




Something different this time...

Dough:

1. Mix 1 quart of whole milk, 1 cup of vegetable oil, and 1 cup of sugar in a pan. "Scald" the mixture (heat until just before the boiling point.) Turn off heat and leave to cool 45 minutes to 1 hour.

2. When the mixture is lukewarm to warm, but NOT hot, sprinkle in 2 packages Active Dry Yeast. Let this sit for a minute so the yeast gets all warm and moist.

3. Then add 8 cups of all-purpose flour.

4. Stir mixture together. Cover and let sit for at least an hour.

(After an hour and more...)

5. The dough should rise to about twice its size. Add in 1 more cup of flour, 1 heaping teaspoon baking powder, 1 "scant" (less than a full) teaspoon baking soda and 1 heaping tablespoon of salt.

6. Stir mixture together. At this point, you could cover the dough and put it in the fridge until you need it—overnight or even a day or two, if necessary. Just keep your eye on it and if it starts to splurge out of the pan, just punch it down.


PLAY DOUGH TIME!!

1. Sprinkle surface generously with flour.

2. Take the dough and form a rough rectangle.

3. Then roll the dough thin, maintaining a general rectangular shape. Rectangle should increase in both width and length as you roll it out.

4. Now drizzle 1 1/2 to 2 cups melted butter over the dough.

5. Sprinkle 1 cup of sugar over the butter, followed by a generous sprinkling of cinnamon.

6. Now, starting at the opposite end, begin rolling the dough in a neat line toward you. Keep the roll relatively tight as you go. Some of the butter/sugar/cinnamon mixture may ooze out toward the end, but that’s no big deal.

7. Next, pinch the seam to the roll to seal it.

8. Spread some butter intp the foil and placed the rolls in.

9. Let the rolls sit for 20 to 30 minutes to rise, then bake at 400 degrees until light golden brown, about 15 to 18 minutes.



Nutella Coffee Frosting

* 2 tablespoons butter, softened
* 2 tablespoons Nutella
* 1 1/2 cups powdered sugar
* 1-2 tablespoons milk
* 1 teaspoon instant coffee
* 1/2 teaspoon vanilla

Method:
In a small bowl, combine 1 tablespoon milk with 1 teaspoon instant coffee and stir until coffee is dissolved.

In a separate bowl, combine butter, Nutella, sugar, salt, vanilla, and the 1 tablespoon coffee-milk mixture. Mix well with electric mixer, adding more milk as needed to make a fluffy spreadable frosting.

Hello Kitty!!

kena "cheated"...

received my first Hello Kitty.
and got terribly deceived by the pictures.
the actual toy was pretty much disappointing.
whole item was almost flattened, seems that it had lost its "puffiness".

nvm... later i pin the name tag and retake the pix again.


OH! and i just received a new skirt!!
which adds to my 20++ skirt collection with some not even wore yet...
then again, i have yet to try it on.

at least these two did managed to cheer me up a teeny weeny bit.

the pressure on finding a suitable store.

the headache of calling them everyday to dig a store out (or rather the leftovers?), and going thru training whilst not knowing which store to take over.

the pressure of having no $$ coming in for the next 3-4 months.

the pressure of taking leave every fortnight at current coy to go for training there.

the problem of finding a suitable house and being shocked at the price of COV every other day. been looking for a house since the 1st quater of this year and still no luck!!!!

** the most recent one was asking for 79K above valuation!!! WTFH!!! just becoz it's 200% renovated, new aircon units, high floor with city view??!!
ok, i got no $$ to buy. the locals are really rich, buying a HDB with damm deep pockets. **

got a last free ticket yet i have no $$ to go anywhere.

i know that the easiest solution: Quit here and Concentrate on that one. but it's so hard to let go, especially when i've been in this line for 5yrs!!

it's all about waiting. and waiting. and waiting.
the problem with me is that i have very very very short patience. or rather i dun have ANY patience.

why is life all about $$? doesn't quality matters in this country?

Banana Walnut Chocolate Chip Muffin



Ingredients...

* 3 cups all-purpose flour
* 2 cups sugar
* 2 teaspoons baking powder
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 225g unsalted butter, melted and cooled
* 2 extra-large eggs
* 3/4 cup whole milk
(i used butter milk instead and added 1/2 cup sour cream)
* 2 teaspoons pure vanilla extract
* 1 cup mashed ripe bananas (2 bananas)
* 1 cup medium-diced ripe bananas (1 banana)
* 1 cup chocolate chip


How to...

Preheat the oven to 350 degrees F.

1. Sift the flour, sugar, baking powder, baking soda, and salt into the bowl of an electric mixer fitted with a paddle attachment.
2. Add the melted butter and blend.
3. Combine the eggs, milk, vanilla, and mashed bananas, and add them to the flour-and-butter mixture.
4. Scrape the bowl and blend well. Don't overmix.
5. Fold the diced bananas, walnuts and chocolate chips into the batter. Spoon the batter into the paper liners, filling each 1 to the top. Top each muffin with dried banana chips, granola, or coconut, if desired.
6. Bake for 25 to 30 minutes, or until the tops are brown and a toothpick comes out clean.


1st attempt was a flop. I forgot to add in sugar and my sister forgot to add in vanilla essence. *_*"

But the aroma of banana was floating all over the kitchen! The next time i shall add in cinnamon to see how it works out. And that is if we rememeber to add in all the ingredients.

Red Velvet Cupcake



Ingredients...

* 1 1/4 cup All Purpose Flour
* 1 tablespoon Cocoa Powder
* 3/4 tsp Baking Powder
* 1/2 tsp Salt
* 1/2 stick of butter, soft
* 3/4 cup Granulated Sugar
* 1 egg
* 3/4 tsp red food coloring
* 1/2 tsp Vanilla extract
* 1/2 cup Buttermilk
* 1 tbl Water
* 3/4 tsp white vinegar (or apple cider vinegar)
* 1/2 tsp Baking Soda


How to...

Makes 6 regular cupcakes

1. Preheat to 350.
2. In a medium bowl, combine the flour, cocoa powder, baking powder & salt. In a different bowl, cream the butter and sugar with an electric mixer until it is light and fluffy.
3. Add egg, red food coloring, and vanilla, and then mix until the red is evenly distributed. Alternately add the flour mix and the buttermilk to the butter mixture. Add the water and mix.
4. In a small bowl, combine vinegar and baking soda, and fold into the cupcake batter. Bake 20 minutes or until a toothpick comes out clean. Remove from oven and let cool in the pan for 5 minutes, then remove to wire rack to cool completely.


Cream Cheese Frosting:
* 8 oz cream cheese, soft
* 1/4 C unsalted butter, soft
* 1.5 cups confectioners sugar
* 1/2 tsp vanilla

- Beat cream cheese, butter, sugar and vanilla


OR


Vanilla Buttercream:

1. Place 2 sticks butter (soft) in bowl of electric mixer.
2. Turn on mixer. Add 4 c SIFTED confectioners sugar. Keep speed on low.
3. When all sugar is in, add 2 tsp vanilla, pinch of salt and 1/4 c milk or heavy cream.
4. Let mix for 5 minutes.


I didn't do either of the frosting, as (to me) the cupcake is good enough to eat on its own. =)

Orangina Cupcake



Ingredients...

* 1 2/3 cups all purpose flour
* 1 tsp baking powder
* 1/4 tsp baking soda
* 1/4 tsp salt
* 1/2 cup butter, room temperature
* 1 cup sugar
* 1 large egg
* 1/2 cup sour cream (lowfat is fine)
* 1/4 tsp orange oil (optional)
* 3/4 cup Orangina
* orange zest


How to...

1. Preheat oven to 350F.
2. In a medium bowl, whisk together flour, baking powder, baking soda and salt.
3.In a large bowl, cream together butter and sugar until light.
4. Beat in egg, followed by sour cream and optional orange oil, if using. Working in two or three additions, slowly alternate additions of the dry ingredients and the Orangina to the butter mixture, ending with an addition of dry ingredients.
5. Evenly distribute the batter into the prepared muffin cups, filling each about 3/ of the way full.
5. Bake for 17-21 minutes, or until a toothpick inserted into the center comes out clean. It’s fine to leave a batch on the counter if you can’t fit all the cupcakes in the oven at once.
6. Allow to cool completely before frosting. Cupcake tops may deflate slightly upon cooling, so don’t worry if it happens.


Orangina Frosting
* 4-oz cream cheese, room temperature
* 1/4 cup butter, room temperature
* 3 tbsp Orangina
* 1 1/2-2 cups confectioners’ sugar
* 1/4 tsp orange oil (optional)

Beat cream cheese and butter in a large bowl until well-combined. Blend in Orangina, and orange oil, if using. Gradually add in confectioners’ sugar until the mixture reaches a thick easy-to-spread consistency. If you prefer stiffer icing, add a little extra confectioners’ sugar.
Spread on cooled Orangina cupcakes.

Carrot Cupcake



Ingredients...

* 3/4 cup whole-wheat pastry flour
* 1/2 cup all-purpose flour
* 1 teaspoon baking soda
* 1/4 teaspoon salt
* 1/2 teaspoon ground cinnamon
* 1/4 teaspoon ground nutmeg
* 1/4 cup canola oil
* 3/4 cup firmly packed light brown sugar
* 2 large eggs
* 1/2 cup natural applesauce
* 1/2 teaspoon vanilla
* 1 1/2 cups finely shredded carrots (about 2 medium carrots)
* 1/4 cup plus 2 tablespoons finely chopped walnuts
* 4 ounces 1/3 fat cream cheese (recommended: Neufchatel)
* 3/4 cup confectioners' sugar, sifted
* 1/2 teaspoon finely grated lemon zest


How to...

Preheat the oven to 350 degrees F. Line 12 muffin cups with paper liners.

1. Sift together the first 6 ingredients. In a large bowl, whisk the oil, brown sugar and eggs until well combined. Whisk in the applesauce, vanilla and carrots. Add the dry ingredients and mix until combined. Stir in 1/4 cup of the chopped walnuts.

2. Divide the batter between the muffin cups. Bake until a toothpick comes out clean, about 20 minutes. Transfer to a wire rack to cool completely.


Frosting:
With an electric mixer, beat together the cream cheese, confectioners' sugar and lemon zest until smooth and creamy. Frost the cooled cupcakes and sprinkle with the remaining 2 tablespoons chopped walnuts. The cupcakes should be stored in the refrigerator.




Peanut Butter Cupcake



* 1 cup all-purpose flour
* 1 teaspoon baking powder
* 1/4 teaspoon salt
* 6 tablespoons (3/4 stick)
* unsalted butter, room temperature
* 3/4 cup smooth peanut butter,room temperature
* 1 cup packed dark brown sugar
* 1 large egg
* 1 teaspoon vanilla extract
* 1/2 cup milk (any fat content)


Preheat over to 350ºF

1. SIFT the flour, baking powder and salt in a medium
bowl and set aside.

2. BEAT butter, peanut butter and brown sugar with
an electric mixer on medium speed until smooth
and lightened in color, about 1 minute. Stop the
mixer and scrape down the sides as needed during
mixing.

3. BEAT in the egg. Add the vanilla and beat 1
minute or until batter is smooth. On low speed,
add the flour mixture and milk in several additions,
beginning and ending with flour and mixing just
until incorporated.

4. FILL each paper liner with a generous 1/4 cup
batter, to about 1/3 inch from the top. Bake just
until the tops feel firm and a toothpick inserted in
the center comes out clean, about 22 minutes. Cool
10 minutes in the pan on a rack. Carefully turn out
cupcakes and turn right side up to cool completely.

Useless and Disfigured

why cant i be like others, who can stay in their job for the sake of money?

Rainbow Cupcake



Ingredients...

* 2 cups sifted self-raising flour
* 1 cup granulated sugar
* 2 tsps baking powder
* 1/4 tsp salt
* 1/2 cup butter, softened
* 1/2 cup milk
* 2 eggs
* 1 tsp vanilla


How to...

1. In large bowl, whisk together flour, sugar, baking powder and salt. You can use any spoon or fork for this.

2. Using electric mixer on low speed, mix in the butter.

3. Next, mix in the milk. Your mixture should pretty lumpy and resemble oatmeal or cereal.

4. Mix in the eggs and vanilla, at which point your dough should immediately smoothen out.

5. Beat on high speed until smooth, creamy and luscious, about two minutes.

6. Divide batter evenly into 5 small bowls; each should have a little more than 1/3 cup batter. Add about 1/2 tsp food coloring to each bowl to make red, orange, yellow, green and blue batters. Stir well, so no streaks of plain batter remain. Add additional food coloring if necessary.


7. Bake in the centre of a 190°C oven until a toothpick inserted into the centre of the cakes comes out clean, about 20 minutes


If you like to do some frosting, u can use either cream cheese frosting or:

Quick Buttercream Frosting
* 1/2 cup butter, room temperature
* 3 tbsp milk
* 1 tsp vanilla extract
* approx 3 cups confectioners’ sugar

In a large bowl, beat together butter, milk and vanilla. Gradually add in the confectioners sugar until frosting reaches a thick, spreadable consistency. You will probably use 2 1/2-3 cups.

The first recipe we made was a disaster.

But she push on forward and the second recipe was a SUCCESS!!

Fugly Choc Cupcake with Cream Cheese Frosting



Ingredients...

* 2 cups flour
* 2 cups sugar
* 1/2 cup unsweetened cocoa powder
* 1 1/2 teaspoons baking soda
* 1 1/2 cups milk
* 1/2 cup butter
* 2 teaspoons vanilla
* 2 eggs


How to...

Preheat oven to 350 degrees.

1. Measure out everything but the eggs directly into your mixer bowl.
2. Mix on low speed just until incorporated.
3. Beat on high speed for 2 minutes.
4. Add eggs, beat on high speed again for 2 minutes.

Measure out into cupcake pan lined with cupcake papers. A 2″ ice cream scoop works great for this. Bake for about 15-20 minutes until a toothpick comes out clean. Let cool slightly in the pan then transfer to a rack to cool completely before frosting.



Thick Cream Cheese Frosting:

* 4 ounces Philly cream cheese
* 1/4 stick butter, room temperature
* 2 cups sifted powdered sugar
* 1 teaspoon vanilla

1. Beat butter vigorously with an electric mixer.
2. Scrape the bowl and add the cream cheese and beat until combined.
3. Add the sifted powdered sugar and vanilla and beat until smooth.

Tiramisu

Ingredients...

* 500g of Mascarpone Cheese
* 4 eggs (yolks & whites separated)
* 4 tablespoons of sugar
* 4 tablespoons of Rum/Cognac
* 4 tablespoons of milk
* 1 cup black coffee
* Cocoa powder (to sprinkle when finished)


How to...

Mix
milk, coffee, 2 tablespoons of sugar & 2 tablespoons of rum/cognac in a
large bowl

Soak
24 lady fingers or sponge cake in the above mixture

Layer
a rectangular glass/aluminum foil pan with 12 of the soaked lady fingers

Whip
egg yolks & 4 tablespoons of sugar. Add mascarpone cheese & 2 tablespoons
of rum/cognac. Mix together well.

Whip
egg whites until stiff peaks form, and then fold into the mascarpone cheese
mixture.

Spread
half the mixture on the soaked lady fingers. Layer the other 12 lady fingers
and cover with the remaining mascarpone cheese mixture. Be sure the mixture is
spread evenly in each layer.

Refrigerate
for at least 2 hours (But I recommend
chilling it overnight). Just before serving, sprinkle generously with cocoa
powder.

Coconut Cardamom Burfi


Ingredients...

* 250g desiccated coconut
* 395g can sweetened condensed milk
* 10 cardamom pods – grind/crush seeds into a powder
* Handful of pistachio nuts, roughly crushed


How to...

1. Mix 200g of the coconut and the remaining ingredients in a bowl.
2. Heat a non-stick pan on low heat and add mixture to the pan. Stir over low heat until the mixture starts to dry and rolls easily into a ball. Remove from the heat. Cool for 5 to 10 minutes until cool enough to handle.
3. Place the remaining coconut onto a plate. Using damp hands, roll the mixture into balls (or any shape u like) and then roll in coconut to coat. The coconut balls can be refrigerated for up to a week.


To chocolate coat the Burfi:
1. Dip the coconut burfi into the melted chocolate with your fingers or with a fork.
(Any chocolate bar u fancy. Microwave, stirring in-between. Usually it takes one to two minutes for the chocolate to become shiny liquid.)
2. Completely submerge and cover. Lift, and run a knife underside and to the sides, to remove excess chocolate.
3. Place the burfi on a wax or parchment covered plate. Quickly coat all the pieces in same way.
4. Place the tray in a cool place, or refrigerate. Once the coating firms-up, gently remove them from plate and store them by placing a wax paper in-between.


be cautious with the cardamom seeds. i put a little too much and the taste of it was slightly overwhelming.
if u like sweet sweet sweets, then u shud try making it.

Margarita Ice Cream



* 125ml lime juice
* 2 tbsp tequila
* 3 tbsp orange liqueur or triple sec
* 150g icing sugar
* 500ml double cream

1. Pour the lime juice, tequila and orange liqueur or triple sec into a bowl and stir in the icing sugar until it dissolves.
2. Add the cream and whisk until the mixture is thick and smooth, but not stiff.
3. Do a taste test. Just in case too much sugar/ alcohol is added in.
4. Spoon into an airtight container and place into the freezer to freeze overnight. This ice cream doesn't need to be taken out to soften before serving, as it won't freeze too hard and melts quickly.


the original recipe calls for tequila. i didn't have any ready stock, thus i replaced it with vodka.
the end taste was pretty mild. probably will slosh in half a cup the next time round.
or shud i try using baileys?

Soupe a'loignon

Soupe a'loignon!!!


- Melt 60g (salted or unsalted, depending on ur preference) butter in a heavy saucepan, add 4-5 (peeled and sliced) onion then cook for 25 minutes until the onion is deep golden brown and beginning to caramelize. Stir from time to time.




- Add 50g of plain flour and stir for 2 minutes.

- Add 1.5L of chicken stock (vegetable stock also can), and approximately a glass of white wine. Season with salt and pepper.





- Add 50g-60g of cubed Gruyère cheese, stir and bring to the boil.







- Cover and simmer for 20- 25 minutes.
- Remember to do your own taste test






all the stirring (just to caramelized the onion!!), almost incapacitate my arm...

Botham Burger

the 2nd most easiest food to make! (pasta being the easiest for me)
or is this the easiest?

Ingredients...

* 2 lb. ground beef, preferably organic
* 2 medium red onion, finely, chopped
* 2 egg
* 2 handful fresh bread crumbs
* 1 tbsp coriander seeds, crushed
* 1 small pinch cumin seeds, crushed
* 1 tsp Dijon mustard
* salt, and, freshly ground black pepper


How to...

1.Preheat oven to 450 degrees F.

2.Mix and scrunch all the ingredients together.

3.Use the bread crumbs as required to bind and lighten the mixture.

4.Divide into 4, then gently and lightly mold and pack each burger together into smallish cricket-ball-sized shapes.

5.Place in the oven and roast for 25 minutes, which should leave the middle slightly pink and the outside nice and crispy.
